Mexican Quinoa Stuffed Peppers. Yum! I also added some chopped cilantro & a bit of shredded cheddar (around 1/4 c.) to the filling. It would be great with some cheddar on top as well. I used 1/4 tsp. salt -- will add 1/2 tsp. next time. We all loved these! JS
